Now don't forget in July we have 2 EVENTS!!!! So be sure to join us for our Annual Christmas in July Event here in a couple of weeks!!!

We've been busy elves getting some great Christmas goodies ready for you!!!

Now for this weeks delicious recipe from our own kitchen!

We should have FRESH PICKED Peaches and Cream corn for the OPEN HOUSE, so this recipe will be PERFECT for you to grab some corn and tomatoes and one of our fresh Basil Bouquets!!!

Fresh Summer Corn Salad

3 heirloom tomatoes (1 pint of small heirloom tomatoes), diced

1 small purple onion, diced

3 cups fresh corn

1/4 c. olive oil (grab our Basil Olive Oil for the best tasting!!)

2 Tbs. red wine vinegar

1/2 c. fresh basil, chopped

salt and pepper to taste

Bring a large pot of water to a boil. Shuck the corn, removing the silk. When the water is boiling, place the corn cobs in the pot. Boil covered for 4 minutes, until bright yellow. Run under cool water until cool enough to touch. (QUICK TIP AHEAD) Find a Bundt pan. Place the corn into the hole in the Bundt pan. Using a chef's knife to slice down and remove the corn from the cob. Perfect for catching those fly away kernels :)

Place all ingredients in a large bowl, mixing well. Refrigerate for 1 hour. Serve and ENJOY!!!!

This will certainly be a family favorite so keep it handy all Summer long!!!
