Oh my it's the BER MONTHS!!! Happy September!

Well we are having a little happy dance over here at our place!! If you read our last blog you know all about how much we love the Fall season!! (If you missed it, be sure to go read it now!) We've got birthday and anniversary celebrations this month too!

We have been busy bees getting the final items for our VERY FIRST Troutt Blessing Subscription Boxes!!! They will go out by Oct. 1st and we can hardly stand the wait to see what everyone thinks!!! What are your favorite things about Fall?? Are you an apple cider or hot cocoa fan? Or both like us LOL? I am so ready to sit out by our firepit roasting marshmallow wrapped in a fuzzy warm blanket! When I was little I would love to pick out my Fall clothes and put on a jacket, then run outside and just sit watching the clouds go by and feel the cool breeze on by face. Then go back inside to warm up with a bowl of piping hot tomato soup and of course a grilled cheese sandwich (cut at an angle to make it all fancy like LOL).

We get excited to turn the AC off, throw open the windows & doors, letting the wind blow out all the cobwebs. There are a lot more since the store has been open HAHA

Well I best close this out for the week and before I go share a new recipe I recently found for Fall! Can't wait to try this one out!! If you get a chance to try it, let us know what you think!

Sweet Potato and Kale Salad with Maple & Citrus Dressing

Yield: 8 servings

For the salad:

2 medium sweet potatoes, peeled and chopped into 1" pieces

1/4 cup diced red onion

2 ripe avocados, sliced

1/2 cup dried cranberries

1/4 cup chopped pecans

1/2 cup crumbled feta cheese, optional

1 head (about 5 cups) finely chopped baby kale

2 cups arugula

2 tsp. olive oil

1/2 tsp. cinnamon

salt and pepper to taste

For the dressing, mix:

Juice of 1/2 an orange

2 tsp. maple syrup (available at Troutt Old Time General Store)

1 tsp. Dijon mustard (available at Troutt Old Time General Store)

1/4 cup canola oil

salt and pepper to taste

Preheat oven to 400 degrees

Toss sweet potato pieces with olive oil, cinnamon, salt and pepper and spread in one layer on a baking sheet. Roast potatoes for 20-30 minutes until brown and tender.

Toss kale with a few tablespoons of dressing and let sit about an hour before serving.

Before serving, add roasted (cool) sweet potatoes, red onion, avocado, dried cranberries, pecans, feta cheese (optional) and arugula. Toss with desired amount of dressing.
